This gluten-free green chicken enchilada casserole checks all the boxes! Quick to throw together with cooked chicken breast, (or rotisserie chicken), gluten free green enchilada sauce, gluten free tortillas and shredded cheese it has flavors that the whole family will love.
With minimal prep, it is faster than traditional gluten-free enchiladas. And it only takes 30 minutes in the oven until you have a cheesy, delicious meal on the table making it the perfect go-to for those busy weeknight when time is short but you still want comfort food.

This meal really is so simple to make. Just keep some gluten free green enchilada sauce in your pantry (this Hatch Green Enchilada sauce is a pantry staple for us) and us some leftover chicken or meal prep it ahead of time and this comes together so fast. It is such an easy recipe but gives delicious results.
I love to mix up the the flavors of my regular gluten-free enchilada recipe that uses red homemade enchilada sauce with the flavors of this GF Green Chile Chicken Enchilada Casserole. The bold flavors of the green chilies is more of a salsa verde stlye dish which is a family favorite for our entire family. Simple Ingredients needed to make this easy chicken enchilada recipe are
- One 15 ounce can of your favorite green gluten-free enchilada sauce, divided
- 3 cups cooked shredded chicken (or the meat from one Costco rotisserie chicken)

- 2 1/2 cups shredded cheddar cheese, or Colby jack or a Mexican-style blend of your preference, divided.
- For Dairy free use a Vegan blend.

You can easily make this green Chile chicken enchilada casserole a gluten free and dairy free dish by swapping out the shredded cheddar cheese for a dairy free alternative. We like to use VIOLIFE Just Like Mozzarella Shreds or their Violife Just Like Mexican Shreds.
What Equipment is Needed to Make a Quick and Delicious Weeknight Dinner
It doesn’t have to take a lot of equipment to make up this fast weeknight meal. Although you could serve it for a large crowd or get together and they would be none the wiser at how simple of a recipe it is! All it takes is:
9×13-Inch Glass Baking Dish: I like ones that come with a lid for potluck style gatherings.
Measuring Cups and Spoons Set: for measuring the ingredients so you don’t run out half way through.
Silicone Solid Turner and Spatula: for making serving a breeze.
How to Make Gluten Free Green Enchilada Casserole with Chicken
- Preheat oven to 350 degrees Fahrenheit.
- In a 9 x 13 glass baking dish, spread a little enchilada sauce, about 1/2 cup of gluten-free green enchilada sauce in the bottom of the casserole dish.
- On top of the sauce lay 6 gluten-free corn tortillas, overlapping so they fit the dish.
- Spread 1 1/2 cups of cooked chicken that has been seasoned with taco seasoning, over the gluten-free tortillas.
- If you don’t have a premade mix of taco seasoning, it includes chili powder, onion powder, garlic powder, paprika, oregano, and salt.
- Sprinkle 1 cup of shredded cheese evenly on top of the chicken.
- Repeat steps 1-4 for another layer by first pouring half of the remaining green enchilada sauce over the chicken, followed by 6 more gluten free corn tortillas, 1 1/2 cups shredded chicken, and 1 cup of shredded Mexican style cheese.
- Finally, top the entire casserole with 8 more gf corn tortillas.
- Pour the rest of the gf enchilada sauce over the corn tortillas.
- Top with the last 1/2 cup of shredded cheese.
- Cover with aluminum foil so the top doesn’t get crispy while the casserole cooks.
- Bake for 30-35 minutes, or until cooked through.
- Carefully remove from the hot oven and enjoy!
